Ingredients
- 12 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 4 tablespoons olive oil
- 5 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 1 lemon, juiced
- 1/2 cup chopped parsley
- Salt and black pepper
Instructions
- 1
Cook the pasta in well-salted water until just shy of al dente. Reserve 1 cup of pasta water before draining.
- 2
Meanwhile, season the shrimp with salt and pepper. Heat 2 tablespoons of oil in a large pan over medium-high and sear the shrimp 1 minute per side. Remove to a plate.
- 3
Lower the heat, add the remaining oil, garlic, and pepper flakes. Cook 1 minute until fragrant, not browned.
- 4
Add the drained pasta, shrimp, lemon juice, and 1/2 cup pasta water. Toss over medium heat until the sauce clings to the pasta, adding more water as needed.
- 5
Stir in the parsley, taste for salt, and serve immediately.
If the garlic browns, start over. It takes 30 seconds and it's worth it.
