Salted Chocolate Chip Cookies

Crisp edges, soft middles, and flaky salt on top. Brown butter does most of the work.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 2 cups chocolate chips or chopped chocolate
  • Flaky salt for finishing

Instructions

    Melt the butter in a light-colored pan over medium heat, swirling, until it foams, then turns golden brown and smells nutty. Pour into a large bowl and cool 10 minutes.

    Whisk both sugars into the butter, then the eggs and vanilla, until glossy.

    Stir in the flour, baking soda, and kosher salt just until no dry streaks remain. Fold in the chocolate.

    Chill the dough at least 1 hour (overnight is better).

    Heat the oven to 350°F. Scoop 2-tablespoon balls onto parchment-lined sheets, 2 inches apart. Sprinkle with flaky salt.

    Bake 11 to 13 minutes until the edges are set and the centers still look slightly underdone. Cool on the sheet 5 minutes.

Chilling the dough is the step everyone skips, and it's the step that makes them taste like a bakery's.
